Fried squid with onions - general principles of preparation

It is important to prepare the squid correctly. Then any dish from this mollusk will be soft and juicy. For squids, it is important that after cooking they do not resemble a piece of rubber.

It is better to use squid chilled, but frozen will do.

Before cooking, the mollusks must be completely thawed at room temperature.

If the whole carcass - first we take out the insides and chitin plate, similar to a flat piece of spaghetti.

When a gutted carcass is available, the work is reduced.

The squid is covered with a film that needs to be removed. It is easy to clean in fresh mollusks. If we cook previously frozen carcass, then we do this. Pour the squid with boiling water or lower it into the pan for ten seconds. Then the carcass must be transferred to cold water. The peel can be easily removed.

Cooking method:

Cut the mollusks into half-centimeter rings.

Recipe 3. Squid fried with onions in hot sauce

Even gourmets will appreciate such a dish. Spicy sauce with a sweet and sour taste, containing many ingredients, turns fried squid with onions into a delicious dish.

Ingredients:

• half the sweet pepper red and yellow;

• carrot;

• 50 gr. ginger

• five cloves of garlic;

• a third of chili peppers;

• sweet onion;

• 0.1 kg of young green peas;

• 0.4 kg squid;

• 50 gr. soya sauce;

• two tablespoons of sugar;

• for p. table sherry, rice vinegar and sweet chili sauce;

• tsp sesame oil.

Cooking method:

Cut the pepper and carrot into thin slices.

Cut the ginger into small cubes.

• 0.15 kg of vegetable oil;

• half a lemon;

• half a bunch of dill;

• 0.1 kg of capers;

• ground pepper;

• four cloves of garlic;

• three gherkins;

• 70 grams of dry wine.

Cooking method:

Cut the prepared squid into small pieces and leave it to lie in a colander so that the excess water is gone.

Separate the yolks from the proteins and send them to the mixer bowl. Add Dijon mustard and turn on the kitchen assistant for thirty seconds. Pour in vegetable oil, squeeze the juice out of lemon, add salt and add sugar. Turn on the mixer for another fifteen seconds.

Pour the contents into a blender and add finely chopped dill.

Chop the capers, crush and chop the garlic. Send both ingredients to a blender.

Finely chop the gherkins. Also, sprinkle them in a blender.
