Cooking the perfect steak is quite a challenge even for professionals, to say nothing of the novice housewives.

A piece of meat can cook too quickly and become dry and hard, or burn out on the outside, and remain moist inside.

How to fry steak - the basic principles of cooking

First, choose the meat for the steak. A piece of meat should be evenly interspersed with fat, which will melt during cooking, which will make the meat juicy and tasty. Typically, steaks are prepared from beef or pork. The taste of the steak depends on its thickness. The optimum thickness of the pieces should be 2.5 centimeters.

When purchasing ready-made meat for steaks, make sure that the pieces are of the correct thickness.

Frozen meat is taken out one day before cooking from the freezer and left in the refrigerator until completely defrosted.

Steaks do not beat, otherwise the structure of the meat will be violated, and it will lose its tenderness and juiciness.

A piece of meat is rolled in a mixture of salt, herbs and spices. Then they lubricate it on both sides with vegetable oil so that the meat does not burn, and the heat inside is evenly distributed.

How much to fry steak. According to the degree of roasting, steaks are of several types:

- with blood - fry for two minutes on each side, after which they leave to rest for six minutes;

- light roast - fried for 2.5 minutes on both sides, leave to rest for five minutes;

- medium fry - three minutes on each side, leave to rest for 4 minutes;

- well-done - 4.5 minutes on each side, leave to rest for a minute.

How much to fry a steak in a pan. The total cooking time is ten minutes. In the process of cooking the meat is turned over several times and left to rest for a couple of minutes.

Serve steaks on warmed plates. Sauces are served to it or watered with juice, which remained from the preparation of the steak. The meat is cut with a sharp knife without chipping.

Recipe 1. Pork Steak in Ginger Marinade

Ingredients

four pork steaks (120 g each);

vegetable oil;

10 g of grated fresh ginger;

50 ml of soy sauce;

orange.

Cooking method

1. Wash the orange and wipe it with a napkin. Using the smallest grater, remove the zest from it. From the pulp, squeeze a quarter cup of orange juice. In a deep bowl, mix soy sauce with zest and orange juice.

2. Dip pork steaks in this marinade so that it is evenly distributed over the entire surface of the meat. Leave the meat to marinate for an hour.

3. Heat a large skillet over low heat and grease the bottom with vegetable oil. We take the steaks from the marinade and put them on a hot pan. Fry for five minutes on each side. We shift the steaks on a plate, cover with foil or a lid to keep warm.

4. In the pan where the steaks were fried, pour the marinade and bring it to a boil. Boil it for a minute and pour the pork steaks with the resulting sauce. Serve steaks with vegetable salad or side dish.

Recipe 2. Beef Steaks in Hot Sauce

Ingredients

four beef steaks, 2.5 cm thick;

vegetable oil;

30 g horseradish sauce;

a pinch of sea salt;

15 g of grated fresh ginger;

a pinch of red ground pepper;

15 ml of soy sauce;

15 ml of liquid honey.

Cooking method

1. Turn on the grill so that it warms up to high temperature.

2. We clean the ginger root and three on a fine grater. We spread it in a bowl, add horseradish, ground red pepper, soy sauce and honey. All mix well with a fork until smooth.

3. We wash the steaks under the tap and dry them with paper towels. We lay out the meat on the board and grease each piece with vegetable oil on both sides. Sprinkle with salt.

4. Put the steaks on the grill and fry for about two minutes, then turn the meat over and fry on the other side for another two minutes. Turn the steaks again, grease with half the sauce and cook for a minute, turn over, grease with the remaining sauce and grill for another two minutes.

Recipe 3. Marsala Steak Flambe

Ingredients

half a kilogram of veal;

ground black pepper;

50 g of cheese;

table salt;

50 ml of vegetable oil;

50 ml of Marsala wine.

Cooking method

1. Cut meat into steaks three centimeters thick. Rinse under running water and dampen with napkins.

2. Finely grate the cheese. Pour it on a flat plate.

3. Bread the meat in cheese chips.

4. Heat the vegetable oil in a pan. Fry steaks in it quickly until a delicious crust appears. After three minutes, turn over a piece of meat, salt, pepper and fry for another two minutes.

5. Set the pan on the board, pour the steak with wine and set fire to it. Use matches for the fireplace or a long bend for this. Prepare cover to extinguish too high a flame. The wine should be warm.

6. When all the alcohol has burned out, put the steaks on a heated plate and pour the sauce remaining in the pan.

Recipe 4. Grilled beef steak with tomato salsa

Ingredients

three beef steaks;

table salt;

a tomato;

10 g of brown sugar;

bulb;

20 g of chili powder;

half red bell pepper;

40 g of fresh thyme;

three cloves of garlic.

Cooking method

1. My tomato and finely chop. Finely chopped onion. Bell peppers are cleaned of seeds, take a half and chop finely. Free the garlic from the husk and pass through the press.

2. Put two thirds of the whole garlic in a deep plate, lightly salt and grind. Add half the finely chopped thyme, brown sugar, chili powder, 30 g of salt and 10 g of ground black pepper. All mix well.

3. Put the beef steaks on a baking sheet and rub them with a mixture of spices, cover and send to the refrigerator for at least four hours.

4. In a separate bowl, mix the onion, tomato and bell pepper with olive oil. Pour vinegar and a quarter cup of filtered water. Add the remaining garlic and thyme, 10 g of salt and 5 g of ground black pepper. Mix well, close tightly and send to the refrigerator.

5. Preheat the grill to a not too high temperature. Put the steaks on the grill and fry for four minutes on each side. Then we cover the grill with a lid and cook the steaks for another six minutes on each side.

6. We shift the steaks to the board, cover with foil and leave to rest for five minutes. Then cut them into slices, put on a plate and pour all the salsa on it.

Recipe 5. Steaks in bacon with aromatic oil

Ingredients

700 g of beef fillet;

two pinches of ground black pepper;

four strips of bacon;

two pinches of salt.

Fragrant oil

80 g of butter;

5 g of lemon peel;

50 g of cheese;

20 g of fresh parsley.

Cooking method

1. Heat the grill to medium-high temperature. Lubricate the grill with oil.

2. We take out the butter from the refrigerator to make it soft. Finely three cheese and mix it with butter. Add finely chopped parsley, lemon zest, salt and knead everything with a fork. We spread the oil on a plastic wrap and wrap it in the form of sausages. We send it for half an hour to the refrigerator.

3. Beef fillet cut into four steaks, a thickness of 3.5 centimeters. Wrap each slice of meat with a slice of bacon. We dress the bacon with a thread and grease a piece of meat with oil. Season with salt and pepper on both sides.

4. Put the steaks on the grill and fry for four minutes on each side. We shift the meat to the board, cover with foil and leave to rest for five minutes.

5. Remove the threads from the steaks. We put a piece of fragrant oil on each and serve with any side dish or vegetable salad.

How to fry steak - tips and tricks

  • If you cut steaks at home, remember that you only need to cut the meat across the fibers.

  • Cook steaks in a grill pan or heavy, cast-iron pan.

  • Start frying steaks at high temperature, then turn down the heat to ensure an even frying.

  • After the meat is fried, cover it with foil and leave the steak to rest for five minutes.
